Summer squashes even after one day from harvest, will begin to develop discolorations and sunken surface areas.
When selecting summer squash varieties in the, store look for clean & shiny surfaces that are smooth. Heavier squashes are dense and are ideal for grilling and other cooking methods.
Mild sunken areas that develop are not ideal cosmetically, but the squash is just fine for eating. You must be the judge on that one. Keep summer squash in a paper bag in your refrigerator for no more than a few days.
